Our failings with the knife

I hope you all had a great weekend. I saw a tweet on X that got me thinking about some of the skills we have lost on the Farm. This is what a Farmer from Canowindra in NSW said: "Another of my many failings as a Farmer is the lack of dexterity with the knife. I can do it, but badly, so I've relied on a Butcher mate in Orange to help me out. He's given it away, so I got Jeremy and his team in. They did a great job and highly recommend them". (Read the full tweet below in the "Sheep and Wool" section below). He got the mobile Butcher in to do something that most Farmers would have done themselves a generation or two ago. I know growing up on the Farm I remember the old man killing and cutting up the Sheep for the Deep Freeze. I helped out, but I didn't adopt those skills to the point where I could do it myself. During my generation was the time when we outsourced the "Sheep killing" thing. How many of these skills have we lost, and at what point do we outsource these things? I am going to answer my own question here and say it's a combination of not having enough time and also the lack of skills to do a competent job. Milking the Cow is another one we have retired from. There's a bit of, I'm not very good at this, and I'm not going to embarrass myself by doing it situation. It's not a bad thing; someone else has filled the void.
